Our family LOVES waffles - they're served often at brunch, dinner, and breakfast (when my kids are willing to make it). The kids insist on peanut butter or fruit, syrup and whipped cream to top their masterpieces. But the adults wanted something a little more refined, hence the strawberry basil balsamic waffles were born. Now, don't get me wrong. We still top them with whipped cream, because we aren't that good at adulting.

However you enjoy your waffles, these are a fun surprise and delicious addition to your menu. Whether it be for brunch, lunch, dinner or somewhere in between.

1 lb Strawberries, sliced
2 Tbsp Balsamic Vinegar
2 Tbsp Honey
3 sprigs fresh Basil, chopped (about 1/4 cup)
2 cups All Purpose Flour
4 tsp Sugar
1 tsp Salt
1 tsp Baking Powder
½ tsp Baking Soda
2 cups Coconut Milk
2 large Eggs
4 Tbsp Vegetable Oil
1 tsp Cinnamon
1/2 tsp Nutmeg, grated
Whipped Cream, optional

The Method

Slice or chop the strawberries into bite sized pieces, place in a medium bowl. Add the balsamic vinegar and honey and stir to combine. This will take a minute as the honey needs a bit of time to break down. When the honey and balsamic form a syrup, add half of the basil and mix until it's evenly distributed. Let this sit while you make the waffles.


Preheat waffle iron. In large bowl, combine flour, sugar, salt, baking powder, baking soda, cinnamon and nutmeg, whisk until blended. Add coconut milk, eggs and vegetable oil, stir until combine. Pour into waffle iron and cook in waffle iron for approximately 4 minutes.


To serve, top a waffle with the strawberry mixture, whipped cream and a sprinkling of basil. Grab a cup of tea and enjoy!
