When I'm dreaming of the beach, anything with tropical flavors helps satisfy my wanderlust. Just a tiny bit, but enough to transport me to the tropics for a few minutes. For a healthy, refreshing option I love to turn to infused water. On a recent trip to Arizona, the hotel had pineapple infused water in the lobby and it was divine.

It's easy to recreate this at home, and the addition of a touch of mint makes the concoction extra refreshing. Throw this together and lie out on your hammock for a perfect summer afternoon.

We love sparkling water at our house and add it to many of our drinks, but this is equally good with flat water or unsweetened green tea.

Ingredients

Fresh pineapple (1/2 round)
Sprig of Mint
Sparkling Water
Ice

The Method

Chop the pineapple into chunks, small enough they'll fit in your glass. Crush one or two mint leaves in your hand and toss in the glass. Add your desired amount of ice (for me that's half the glass...) and top off with sparkling water. Stir and enjoy!
