These quesadillas make everyone at our dinner table happy, which is sometimes a challenge. We solve that by allowing each of the kids to customize their quesadilla and add the ingredients they love. Sometimes that means that they have cheese and a tortilla, but other times they get a little more adventurous and add greens. All on their own!
The hubs and I are happy because this dinner comes together in about 30 minutes, if you're quick with the prep. Just enough time to throw these in the oven, get in a quick workout and then spend the evening with the fam. Get creative with your ingredients, and mix and match your favorites. I rely on what is still in the fridge most nights. Let's get cooking!

6 burrito size Tortillas
2 cups Cheddar Cheese, grated
1 can Black Beans, drained
1 Red Pepper, diced
1/4 cup Onion, diced
1 cup Greens
1 Jalapeno, chopped
Preheat your oven to 350 degrees. Line two baking sheets with parchment paper. Place three tortillas on each baking sheet, overlapping them slightly so that when they are folded in half they don't touch.
Sprinkle desired ingredients on HALF of the tortilla, fold in half when filled. Repeat for all tortillas and place in oven. Flip after 10 minutes to brown on both sides, remove when tortillas are slightly crispy.
Slice into triangles and serve with salsa and sour cream!
