The snack dilemma... Finding something tasty that's portable and easy to keep stocked in the cupboards. These energy bites mostly fit the bill, because let's be honest. Keeping ANY snacks in a house with five people is nearly impossible. In fact, while putting together the batch for this blog there were several bites that mysteriously disappeared from the tray. And by "mysteriously" I mean stolen by our 11 yo.

We first took these on our first family backpacking trip, they were a WILD success. Since then they've become a staple around our house, where we take them as many places as possible - to the BMX track, on the ski hill, mountain biking... All the places.

These treats are loaded with nut butter, oats, flax meal and a little chocolate for fun. We used peanut butter in this recipe, but you could easily sub other nut butters if there's an allergy in your family. Another great option is to substitute dried fruit for the chocolate. We managed to get 40 bites out of this recipe, but I didn't do a great job counting those that walked off so you may get a few more.

Prep Time: 15 minutes
Servings: 40 bites

3 1/2 cups Old Fashioned Oats
1 1/2 cups Peanut Butter (or other nut butter of your choice)
3/4 cup Honey
1/2 cup Flax Meal
1 1/2 cups mini chocolate chips

The Method

Add the oats, nut butter, honey and flax meal to a mixing bowl. Stir until combined thoroughly. Check the bottom of the bowl as little dry bits get stuck there and don't integrate well later.

Add the chocolate chips and stir until combined.

Shape into 1 inch balls and refrigerate in an airtight container until ready to eat.
