When you hear the word "parfait" does it take you back to the scene in the movie Shrek, where Donkey is trying to convince Shrek he is like a parfait? No? Just me??? Okay then...
As previously established, this lady is not a morning person. After being coaxed out of bed with coffee, breakfast is the last thing on my mind. But around 9:30 or so, it's time for some nourishment. The tricky part is that by mid-morning my day is in full swing and it's pretty often that I'm grabbing breakfast between conference calls.
Cue the magical breakfast parfait. Complete with a handy carrying container and filled with protein rich greek yogurt, fruit, nuts and maple syrup - it's the perfect breakfast "on the go". Now I realize I'm not actually going anywhere, but you get the idea.
It's easy to make a bunch of these early in the week and have them on hand. One of the benefits of this is that if it's not fruit season where you live, frozen fruit is a great stand in and defrosts perfectly during it's time in the fridge hanging out.
Active Time: 5 minutes per parfait
1 container Fage Greek Yogurt (we get the giant one at Coscto)
6 cups Fruit, fresh or frozen
1 1/2 cups Sliced Almonds or Granola
3/4 cup Maple Syrup (sub Honey or Agave Nectar if desired)
6 pint sized Mason jars (with rings and lids)
Add 1 cup yogurt to each jar, top with 1 cup fruit. Press the fruit down into the yogurt to make room for the remaining ingredients. Scoop 1/4 cup almonds or granola on top of the fruit and top with 1 tablespoon maple syrup.
Add a lid and pop in the fridge until you're ready for breakfast!
