We are passionate about waffles at our house. They need to be crispy, yet light, and have enough substance to keep our tummies full for more than an hour. Below is our very favorite recipe, which we've used for over a decade in our household.
We've packed up mixes for a long time to use in our RV when we are up at Tangled Acres having a ski weekend, but jars of this mix have made it to friends and family and many other family trips over the years. As the mom of this operation, I love that this comes together fast and is a dump & go kind of a mix. The original recipe calls for whipping the egg whites and folding them into the mixture. If you've got the patience for that, I bow to you. In this house we pour everything into a bowl, whisk and hope for the best. Luckily this is failsafe no matter if I'm making it in the kitchen for a brunch or over a campstove, it's equally welcome in both worlds.

3 cups All Purpose Flour
2 Tbsp Sugar
1/3 cup Cornmeal
1 1/2 tsp Baking Powder
1 1/2 tsp Salt
3/4 tsp Baking Soda
Containers to store mix
Add all ingredients to a bowl and stir to combine.
Transfer to storage container or gift container and provide the following instructions:
- Pour contents into a bowl
- Add 3 cups Milk (Coconut milk works great here), 3 Eggs and 3 Tbsp Oil
- Stir until combined
- Bake in waffle iron or on griddle
- Serve with your favorite syrup! We recommend our apple cider syrup!
