Ever have a random mashup of veggies in the fridge that need to be used? This is a perfect dish for them! Add some cheese and eggs and you have dinner.

Our family loves a combination of broccoli and cheddar cheese or red pepper, tomato and mozzarella. Have some extra herbs? Add those too? This recipe is amazingly flexible and requires only 20 minutes of active time before tossing in the oven. Play a board game with your kids, get caught up on your fave TV series, do something responsible - your call. But either way you won't be stuck in the kitchen for hours and will have a company worthy dinner ready to share.

Ingredients

Crust:
1 1/4 cups All Purpose Flour
1/2 tsp Salt
1/2 tsp Sugar
1/2 cup Butter, chilled and cut into pieces
1/4 cup Ice Water

Filling:
2 cups Veggies, chopped
2 cups Cheese, grated (we used cheddar)
10 Eggs
1/2 cup Milk (any kind, we used Coconut)

The Method

Preheat oven to 425 degrees.

In a food processor, combine the flour, salt and sugar. Pulse until combined. Turn the food processor on and begin adding the butter a couple chunks at a time until all the butter is added and the mixture looks like sand.

Slowly add the water until the mixture forms a ball. On a floured surface, roll the dough into a round approx 1/8 inch thick. Place into your quiche or pie pan and press into the corners, trim the edges.

Place the chopped vegetables into the pan, then top with the cheddar cheese. Break the eggs into a bowl, add the milk and whisk. Pour egg mixture over the veggie/cheese mixture.

Bake in 425 degree oven for 15 minutes, then reduce the temperature to 350 degrees and bake for 45 more minutes.

Slice and serve!
