Chai Tea is wildly popular at our house, yet I've always been intimidated to make my own concentrate as it seemed like a monumental amount of work and a very time consuming process. I could not have been happier to find out I was completely wrong on both regards. The trickiest part of this entire process is finding a couple of the ingredients, but that is easily resolved with an Amazon order.
The entire process of making this concentrate takes about 25 minutes, since there is a little bit of prep to get the ingredients ready.

Jars to store concentrate
Fresh Ginger, approx 3 inch piece
4 sticks Cinnamon
1/4 cup Cardamom Seeds
8 whole Anise Pods
40 whole Cloves
1 tsp ground Pepper
2 tsp ground Nutmeg
40 green or black tea bags or 3/4 cup tea leaves (we used black tea)
2 2/3 cup Brown Sugar
1/4 cup Honey
1/4 cup Vanilla
18 cups boiling Water
Peel ginger, slice into disks and place in a large stockpot. Slice peel from oranges, juice fruit into stockpot. Add remaining ingredients except water.
Heat water to boiling and pour over spices.
Let steep 15-20 minutes, depending on your preference.
